Serves 4
Breakfast Filling
Ingredients
1 Pound - Sausage, Venison or Italia
1/2 Cup - Onion Chopped
1/2 Cup - Red Bell Pepper Chopped
2 Cloves - Garlic Finely Chopped
15 Ounces - Tomato Sauce
10 Ounces - Whole Kernel Corn, Frozen or Canned
4 1/2 Ounces - Sliced Mushrooms, Fresh or Canned
Preheat oven to 400 Degrees F. Combine sausage, onion, bell pepper and
garlic in 10" skillet over medium heat. Stir frequently until sausage is
on longer pink. Drain, Stir in tomato sauce, corn and mushrooms. Heat to
boil then remove from heat. Spoon filling into Campfire Mugs until 2/3
full.
Corn Bread Topper
2/3 Cup - Cornmeal
1/3 Cup - All Purpose Flour
1/2 Cup - Milk
1 Tablespoon - Sugar
2 Tablespoon - Vegetable Oil
2 Teaspoon - Baking Power
1/4 Teaspoon - Salt
1 Egg
1/2 Cup - Shredded Monterey Jack Cheese
Combine all ingredients except cheese in medium bowl. Mix vigorously for
30 seconds. Stir in cheese. Pour batter over breakfast filling to 1/4
inch below top of mug. Bake uncovered for 20-25 minutes topper is golden
brown.
Or Cook on the grill over medium-high, indirect heat [no coals or
burners on directly under the Campfire Mugs], Place foil on grill. Then
cook with grill cover on.
