Praline Peach Muffins
Serves 4
Ingredients
3/4 Cup - Brown Sugar
1/2 Cup - Milk
1/3 Cup - Vegetable Oil
3 Tablespoon - Butter or Margarine
1 Teaspoon - Vanilla
1 Egg
1 2/3 Cups - All Purpose Flour
2 teaspoon - Baking Power
1/4 teaspoon - Salt
1 Cup Peaches - Chopped: Fresh, Frozen or Canned
3/4 Cup Pecans - Chopped
Preheat oven to 400 Degrees F. Grease bottoms of campfire mugs.
Prepare Topping
1 Tablespoon - Butter or Margarine
1/4 Cup - Brown Sugar
1/4 Cup - Pecans, Chopped
Combine ingredients in bow. Cut ingredients together using a fork until
crumbly. Set aside.
Muffin Mix
Combine brown sugar , milk, oil, vanilla and egg in large bowl and mix
together. Stir in flour, baking powder and salt. Fold in peaches and
pecans. Fill Campfire mugs with batter till 2/3
full. Sprinkle with topping. Babe uncovered for
18 to 20 minutes or until
golden brown.
Or Cook on the grill over medium-high, indirect heat [no coals or
burners on directly under the Campfire Mugs], Place foil on grill. Then
cook with grill cover on.
Serve warm or cool with whipped topping or ice cream. Caution - Campfire
Mugs will be Hot!
